Bream behaviour

Walking along the canal earlier - weather scorchio, water surface flat calm.
There are a couple of shoals of bream in this stretch. I don't fish it.
Mrs Heron flew over and many of the fish instantly and simultaneously broke the surface. Is this a preservation reaction to distort the visual for a predator?
Later I noted the same reaction when a Mallard flew over.
What exactly do fish "see" above the surface? And do other shoaling fish do this too?
Do they do it if you wave your pole about? (Not a euphemism)
