According to Barrie Rickards (who should have known if anyone did) what you have to do is: lay the pike on its side and lift the gill cover from behind, this will cause the pike to open its mouth and you can usually get the hooks out then with forceps.
That’s interesting. I don’t target Pike any longer but, when I started, I was taught to put the pike on its back (kneeling astride it to stop it rolling over if required) and the jaw goes limp. It has always worked for me, though I still carry long artery forceps when I’m lure fishing, just in case.
